Wherever extra care and precautions are needed during the process, I have mentioned them very clearly, so that you just cannot go wrong. For e.g. if you cook prawns for even a little longer than 3-4 minutes, that turn tough and hard. Mutton and chicken if cooked on very high heat tend to get hard as the protein in them toughens on high heat. Cooking on moderate heat is best for mutton and chicken whereas fish requires cooking on low heat. Learn the cooking secrets and enjoy a variety of perfect non-vegetarian food.
